Painting and beating eggs

Starting the Easter celebration with an egg (pysanka) is a custom that has been in Ukraine since ancient times, as it symbolised the germ of a new life. People paint the shell of an egg in bright colours by using wax paints, with each colour signifying a different meaning (red is the joy of life; yellow is sunlight; blue is for health). After receiving their colourful adornments, they are then considered sacred, together with the Kulich (Easter cake) in the church. Later at home, everyone eats national holiday dishes – holodets (frozen pork broth), homemade sausages and more. Children usually play the game called beats; they knock each other’s egg. Whoever’s egg breaks is the loser.

BOCUK NIGHT - OIB MTAL

          People, wearing costumes, celebrate traditional 'Bocuk Night' in the Camlica Village of Kesan district of Edirne, Turkey. Bocuk Night, an evening in which locals paint their faces in scary make-up to spook community residents in honor of a family of ghosts, is a medieval tradition in Balkans.

Ingredients
  • 2 cups green pepper, chopped
  • 1 cup diced tomato
  • 1 small onion, finely chopped
  • 2 eggs, beaten
  • 3 tbsp oil
  • ½ tsp salt
  • 1 pinch of black pepper (optional)


Ready in 20 minutes
Serves 4 people
  

Preparation
1.    First, Place the oil and onions in a pan and sauté the onions for 2-3 minutes over low-medium heat.
2.    Second, add peppers and salt.
3.    Third, Close the lid and cook until the peppers become soft by stirring occasionally.
4.    Next, add the tomatoes, stir and cook for 5-6 minutes with the lid closed.
5.    Finally, add the beaten eggs and stir.
6.    Later on , It’s done when the eggs are cooked
7.    After that, You can sprinkle some black pepper on top if you like.

Tips / Comments
It is a traditional Menemen is a very good and famous dish for breakfasts.
It is better to serve it with bread while still warm.

MADIMAK

Ready in 20 mins
For 4 people



Ingredients

        1 Kilogram Madimak
        Half a Cup Of Oil
        3 Large Onions
        100 gram of ground beef
        2 Tablespoons of tomato paste
        1 or 1,5 glass  of boiled water
        1 tea glass of bulgur
        2 teaspoons of salt and red pepper on request

Preparations

  1. First, Madimaks are washed chopped in small pieces
  2. Second, roasted onion and oil are added on bacon and tomato paste.
  3. Then, wait for 5 minutes until the madimak die.
  4. Later on; the boiling water,bulgur and red pepper  are added on it.
  5. Finally, with a  low fire for 30 minutes, the pan is closed halfway and left to cook.

 Tips/Comments

Optionally served with yogurt and red pepper.
